Pie Crust 101

Our friend Julie Cliett so graciously volunteered to teach me how to make a great pie dough. After all she won grand champion pie at the fair this last year. So we finally had time to set up a class. Joining us on this adventure was the desert king of the Black Iron Gang, Walt Lowe, whom we found out had never made homemade pie dough.  It was a great fun class to have, when we got to the baking part it was not so fun for me. I burnt a beautiful Blueberry Pie in the pre-heated (650 degree) Dutch Oven, let me tell you it was quick at that temperature. So I made another pie which was an apple pie that turned out great. Also we had a St. Patrick Day, meal of Corn Beef and Cabbage with fried potatoes (Wayne Slinkard) and baked individual pies and other deserts (Julie Cliett)..  What are we going to do next?

Well we sure have been busy doing some fine cooking in March. The 9th and 10th of March the Black Iron Gang and Black Betty BBQ teamed up to cook for the New Mexico State Legislature Staff. Thanks to Madux Hobbs, Walt Lowe this event turned out to be a big success. We served over 600 people on Sunday. The line seemed like it would never end. On top of all this it snowed on us while there, that was pretty neat. Here are a few pictures that I took.
